Charred Hispi Cabbage

Charred hispi cabbage is a delicious twist on a classic vegetable, offering a perfect balance of tenderness and rich, caramelized flavour. When grilled to perfection, the outer leaves develop a crisp, slightly charred texture while the inner layers remain soft and juicy. The natural sweetness of the cabbage is intensified by the grilling process, creating a mouth-watering side dish that pairs perfectly with any BBQ spread. Whether seasoned simply with salt, pepper, and olive oil or dressed with bold spices, charred hispi cabbage is a standout on the grill, offering a satisfying and flavourful experience with every bite.


Charred Hispi Cabbage



Ingredients:


  • 1 medium hispi or sweetheart cabbage (trimmed and quartered)

  • 2 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • 1/2 tsp freshly ground black pepper

  • Pinch of sea salt



Method:


  1. Light your charcoal and allow it to heat until you have a steady, medium-high heat. Set up your grill for direct grilling.

  2. Trim and halve the hispi cabbage, keeping the core intact to help hold the halves together while grilling.

  3. Place the cabbage halves cut-side down on the grill over direct heat. Cook for 4-5 minutes, or until the cut side is nicely charred and crispy. Turn the cabbage and grill the other side for an additional 4-5 minutes, until tender and slightly charred.

  4. While the cabbage is grilling, mix 2 tablespoons of olive oil, lemon juice, lemon zest, freshly ground black pepper, and a pinch of sea salt in a small bowl.

  5. Grill the cabbage with the outer side down and finish by brushing the oil on the grilled cut sides for 3-4 minutes to allow the flavours to meld.

  6. Remove the cabbage from the grill and serve immediately. Enjoy the tender, charred cabbage with a zesty, peppery finish! Great with our Romesco Sauce Recipe.
