Mexican Street Corn (Elotes)

Elotes, the ultimate Mexican street food, is a perfect blend of smoky, creamy, and tangy flavours. Grilled to perfection, each cob is slathered with a luscious layer of mayonnaise, sprinkled with fresh cotija cheese, a squeeze of lime, and a dash of chili powder. It's the ultimate snack for any occasion, delivering bold, irresistible flavours that transport you straight to the vibrant streets of Mexico.


Mexican Street Corn (Elotes)



Ingredients:


  • 4 Corn on the cobs (Frozen work great)

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream

  • 1/2 cup cotija cheese, crumbled (or Parmesan as a substitute)

  • 1 tablespoon Mexican themed Rub

  • Juice of 1/2 a lime

  • 1 garlic clove, minced

  • Salt to taste


Garnish (Optional):

  • Lime wedges

  • Fresh cilantro

  • Spring onions, finely sliced

  • Red chilies, thinly sliced



Method:


  1. Prepare the Corn:

    • If using fresh corn on the cob: Boil the corn in a large pot of water for 5-7 minutes until just tender. Drain and let cool for a minute.

    • If using frozen corn on the cob: Boil the corn in a large pot of water for 8-10 minutes, or follow package instructions. Drain and let cool for a minute.

  2. Light your charcoal and allow it to burn until it reaches a medium-high heat with a nice, even layer of hot coals. Make sure the grill is properly preheated for a smoky, charred finish.

  3. While the corn is grilling, mix together the mayonnaise, sour cream, minced garlic, lime juice, Mexican rub, and a pinch of salt in a bowl. Stir until smooth and well combined.

  4. Once the corn is grilled, remove it from the heat and let it cool slightly. Brush each corn on the cob with the prepared creamy sauce, ensuring an even coating on all sides.

  5. Sprinkle the cotija cheese over the sauce-covered corn. Garnish with fresh cilantro, finely sliced spring onions, and red chilies for an extra kick.

  6. Serve your Elotes with lime wedges on the side for a fresh burst of flavour. Enjoy the delicious, smoky, creamy, and spicy goodness!
